Re bonding with Ghee :)

Sorry for my reference time and again to the 90’s , but well late 80’s and early 90’s did mark a lot of changes in our country. And not all of them were good. I remember this one ad on Tv strongly depicting Ghee as some pale frozen liquid at room temperature and a free flowing wonderful supposedly “healthy” oil. Now imagine the same running through tiny little arteries to your most important organ: “heart”, obviously ghee was the declared new villan of the decade. C@Rg

So strong ,visually was this Ad, in its depiction that not only did I ,but many , almost million of households changed their cooking medium overnight. So much so, that we stopped smearing our chapattis with ghee and then eating chapattis was never the same.😓 From taking the prime spot in every kitchen , it suddenly saw the last shelf in a small tin, meant to be used occasionally. Refined oils glamour didn’t last long as people soon realised its ‘unhealthy benefits” and came along its healthy cousin “olive oil”. and so on…. Such is the effect of marketing and and advertising. I do not have anything against any one of the oils, but It definitely saddens my heart to see an ancient almost medicinal , cooking medium -Ghee suddenly disappear from households. We had cooking shows, and people in their homes literally show off oils drizzling out of this swanky little glass bottle with a nozzle on top. Now health is not a fad. Please read on and surprise yourself. Some of the things you may know already which is good, and Im hoping you have started your bonding with Ghee, some of you who are not so aware please continue reading its supreme benefits along with my own personal experience. Ghee has an important place in Ayurved. As we all know Ayurvedic medicine stresses on maintaining the balance between the 3 elements or doshas called ”Vat, Pitta & Kapha” . Now when any one of these go out of balance, ghee is used to administer medicinal herbs as the healthy fat in it acts as a catalyst in absorbing the medicines better. Ghee helps clean the body inside out. (Many hollywood actresses from the west have a tsp of it daily first thing in the morning😑perhaps more so as they wouldn’t know how else to use it…but we know several ways !) C@Rg

Ghee has the highest smoking point. Which means that oils with low smoking points such as our refined oils, olive oils, etc burn soon and release toxins that indirectly we are consuming those along with our fried food. Ghee on the other hand has the highest smoking point at 252 degrees celsius. For those who read my recipe posts will know by now, that I even deep fry in Ghee…Do you know the reason? Well, from experience I can swear that after frying 1 batch of any item , lets say gujiya, you have to refill the pan with oil, ( you all must be thinking well thats normal) I have news, I fry 50 gujiyas in pure ghee, without refilling even once. Do you know what that means.? No ghee absorbed in the food, no excess ghee in your body, no health issues. That truly is a miracle. However deep frying in Ghee is strictly a sensitive and personal choice. But then there is good old mustard oil or coconut oil. (but no veg oil/olive oil please)C@Rg

Pure cow ghee does not have lactose and casein, which means its a very good option for people with lactose intolerance.

A genuine concern of most people that ghee maybe bad for cholesterol, well studies have shown that Ghee actually reduces Cholesterol.

Ghee has anti-fungal and anti-bacterial properties which heal the body in multiple ways. In addition to anti oxidant properties, Ghee has a natural fatty acid that is anti-cancer .

Cow Ghee creates a more alkaline system thereby is anti-inflammatory.

Ghee strengthens the nervous system and boosts memory.

Ghee lubricates the Joints and connective tissues thereby keeping the body agile and youthful. It is beneficial for eyesight, hair and skin .

Cow Ghee is preventive keeping various diseases at bay because it flushes out toxins and repairs damaged tissues thus promotes Longevity and youth.C@Rg

If the above are not good enough reasons for you to switch to ghee and then here are a few more – It is also is rich in Vitamin A,D, E & K. All weight watchers, for the nth time please note, Its a fat that doesn’t make you fat,as Ghee is excellent source of Fat -Soluble vitamins and healthy fatty acids that help in weight loss. Its a perfect balance of Omega 3 to Omega 6. It has Butyric acid, that aids in better digestion.

During pregnancy, Cow’s Ghee is an excellent source of energy & nutrition to both the mother and the child. Ghee aids in a normal delivery and is magical for both the lactating mothers as well as the new born.

Hot Chapattis ( Indian bread) smeared liberally with Ghee , Dal with extra Ghee tadka and dollops of Ghee added to Rice & Khichdi are customary in every Bhartiya home that has a science and logic behind it as Ghee helps to Assimilate Nutrients ,and further aids in Digestion.

Early morning on an empty stomach, 1 tea sp. of warm ghee if taken is very beneficial. Similarly before bed time putting a few drops of warm ghee in the navel has umpteen benefits too. (hair /skin/eyesight, as mentioned above already) Then of course we all are familiar with its divine aroma and unparalleled taste. C@Rg

Ayurvedic wisdom considers it healthy, medicinal and Sacred.

Everything in moderation is good. Do not fear the use or over use of ghee. Those Ads played with our minds. Just lets be mindful of how and when to use it, and allow our future generations to reap the benefits of this wonderful food called Pure Ghee.

  1. As a newly married girl, i really was unaware of ghee and its benefits and actually have been forcing my MIL to shift to Olive Oil. Oh God:( What and eye opener. Thank you Rekha, for this!!
