Matthi ‘with a twist’

I know all of us cook Matthis every now and then as its a staple snack of most homes, so why am I posting this recipe? It is Matthi but with a healthy twist, so you and your family can eat as many as you like without a thought of putting on weight. We all know Maida(APF) is difficult to digest as it is refined and my cooking style these days is essentially devoid of any refined ingredients . So cheers to a healthy twist. And O yes, healthy in no way means boring…its just new variations with the same taste.

Ingredients-

Servings: 10-12 pieces of appx 2.5inches each

Flour 120 gms. (Gram flour/ Rice flour/whole wheat flour in equal proportions) ,

Ghee/ (Oil)- 30 gms, (in hindi to give moein) ,to mix in flour while kneading to make it like a short crust dough,that keeps it nice and flaky ,

Salt -1/2 tsp. ,Carom Seeds 1/4 tsp(ajwain).

Warm water 1/4th cup.

1 cup : Pure Cows Ghee /(Oil) – for deep frying

STEPS

(Except for the 1 cup ghee) Add all the above ingredients in a bowl. Gently rub with your finger tips, the flour, so as to make sure ghee is properly distributed to the flour. Now adding little water at a time just bring the dough together to form a hard dough. Cover with a wet muslin cloth and leave it to rest for 20 minutes. C@Rg

Put a Karahi with Ghee in it on the flame. Now knead the Dough once again. Roll out 3 matthi’s and prick them with a fork so they don’t puff up. (meanwhile keep the dough and rolled out matthis covered at all times with the wet muslin cloth.) When the Ghee is hot, reduce the flame to medium and then slide in all 3-4 matthi’s .After about 2-3 mins when golden brown flip all the matthi’s, to cook on the other side too. When golden brown remove onto a plate . Similarly, fry all batches. When cooled to room temperature, store them in an airtight container. C@Rg

Enjoy with your favourite achar (pickle) or with a cup of hot tea.

You all must be wondering by now 😎on my insistence on cows ghee and why ghee each time for every dish , and even for deep frying. Well Im soon going to dedicate a post with the immense benefits of ghee and how we need to revive back this lost divine food of our culture.C@Rg
